I saw your post Bladbuilder so I decided to try my hand at ham. didn't have the room for a full ham so I did a small test. here is how it worked out using Pops brine for 14 days.

I had the smoke house @ 240* and took IT to 155.

Your test ham looks good! It really isn't difficult is it?
