Reverse Seared Prime Rib Steaks on a Saturday Night

Stopped at the local butcher's shop on the way home from work on Saturday and they had bone in prime rib steaks on special for $9.99/lb down from $12.99/lb.  I picked two and was out the door for $23.58.

 

Rubbed them up with some salt and pepper and threw them in the smoker at 250 for an hour, then threw them on the hot cast iron skillet for 1 minute per side and served them.

 

 

 

 

My wife commented that it was one of the best steaks she'd ever had.
