Gonna be a Baby Back night! Pulled a couple racks out of the freezer a few nights ago.


Removed the membrane last night-ready for Jeffs rub.


All rubbed up. Wrapped each one in plastic wrap.


Wrapped them together in HD foil and into the fridge overnight.


Into my little MES at 260*. Had to cut the racks in half to fit in the smoker. This is one time I wish I had a bigger smoker!

All you new MES owners out there, This is why you need a Maverick or similar therm. My Mav is set up to monitor temps on rack 2(268) and rack 3(214) where my ribs are. Temps vary a lot in these smokers. That is why you need to know what temp you're actually cooking at. When I pull the ribs for wrapping I'll switch racks.
 
Shouldn't the beans get some meat drippings in them? Maybe next time. Ribs are looking great!:drool

Got to confess;  I had to google Edamame.  I had never heard of it before but it sounds great.  Think I'll have to try to make some Edamame succotash.  With bacon in it it's got to be good.
 
One eyed Jack, Yeah, it's really good. She cuts corn off the cob, adds a little edamame( she buys a bag of frozen), some small diced red bell pepper, A little bacon ,of course, and sautees it with a little butter. Salt and pepper to taste. I can't get enough of it. Thanks for looking, David.
