My first time making Pepper Beef Stout (with Q-View)

Hello all!  Trying my hand at making Pepper Beef Stout for the first time on the little Weber Kettle.  Recipe courtesy of The Wolfe Pit YouTube channel (vid below).

 

Letting her go till she reaches 165 F internal temp.  Apple wood for smoke, minion method for heat.  Pre-salted her with coarse Kosher salt and course ground pepper yesterday.  This morning, I added some granulated garlic powder, cumin, and coriander.  Will post more pics as the cook chugs along.

Almost 2 hours into cook.  She is sitting at 145°f, looking and smelling guuuud!

 

Got the peppers, worchestershire (say it quickly lol, "whats this here sauce?") and Guinness ready.

Shes in the oven now @ 350°f.  House smells unbelievably guud!

Good lord thats guud eatin!  It came out sooo moist and tender!  The pepper-jack cheese and horseradish really complimented it well!
