Looks tasty! I quit using QT when making these. I use cure #1 ( yes I add the appropriate amount for the weight of the ground meat, 1 teaspoon per 5 pounds). QT is hard to fine where I live so it's an order item for me too. Since I use cure #1 for just about everything else I make I just go with it instead.

1 tsp per pound ?!?!

I don't think so-------I believe it should be 1 tsp per 5 pounds!!!

Hoping that was a mistype, Case.

BTW:   I like the flavor of TQ more, and it's easy to get at the Supermarket near me.

LOL----I know what you mean!!

If I didn't correct my Auto correct, you guys would think I was a total idiot. You wouldn't believe the words it substitutes in some places!!!

Yeah, they're spelled right, but have no business being where they are put.

Bear

Yep you gotta double check text, no telling what spell check substitutes

The ends look a little dark, unless it's just the Pic.

I quit making these, and went to my "Bear Loaf".  So much easier!!

Bear
A few of the pieces closer to the heat have some dark ends, but nothing that will ruin anything .

Temps creeped up to around 220F towards the end

I will have to try your Bear Loaf, but I think I will have to do your dried beef or BBB first!

So I just stumbled across this at a local grocery store that I checked for just last week

With this and the two bags ordered yesterday, I'm basically swimming in the stuff.
LOL----That's OK----TQ keeps a long time!!  (Cool & Dry for years)

I just keep mine in one of my top kitchen cabinets.
