Hello to all!  I've been making smokey goodness for about 12 years now.   I started out with a WSM 18.5 and since then have made a WSM mini as my go to cooker.   This site has given me a wealth of information over the years and thought it was time to join the group.  If you're ever driving through my small town, just roll down your window and follow your nose to my place.  I'll be happy to feed ya!

Welcome to the forum! It's a great site, lots of friendly people who like to help others.I've only been smoking for a year or so and I've learned a lot here. Got any ?s, use the search bar, or if you still can't find an answer, post it and you'll get plenty of help. Happy smokin', David.

Thanks for the welcome guys.  I've done the usual stuff quite a bit. You know, ribs, chicken, trip-tip, fatties, butts and abt's.

Brisket has always been the one that has scared the heck out of me to try.  Well, enough of that.  I put a full packer on Saturday night.  She reached 200 in 12 hours and was put in a cooler for a 3 hour nap. It turned out amazing.  It won't be my last.

Gary,  Those are quite the compliments coming all the way from Texas.   You guys really know your stuff down there.
 
Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...
