Hello all!  I decided to try my hand at smoking beef short ribs, Texas style today.  Using a Weber Kettle, apple wood, and minion method for the heat.

I trimmed most of the fat off the lighter colored rack and left most of the fat cap on the darker looking rack.  I am trying two different rubs; the darker one is brisket rub and the lighter one goes great on pork and chicken so we are trying it on beef.

Each rack is somewhere between 1"-1.5".  I guess i'll let them go until they reach 203 degrees.

Yeah you don't need the smokenator and these baskets hold more fuel, plus you can scoot them around wherever you want them or put them together in the middle too. They came with my performer and I don't know how I ever got by without them.

Oh my these are guuud!!!  Both rubs were really tasty but I preferred the lighter colored rack over the the brisket rub.  7.5 hours total cook time and 35 minutes rest.  These things were juicy and tender!  I put BBQ sauce on the side in some little ramekins because I prefer all my ribs (pork and beef) dry.  Oh yeah, I forgot to mention, I did foil them for an hour.

Those look great! Hard to find beef ribs around here though. Would have to buy a rib roast w/bones around the holidays and cut them off and freeze.
