They're ok. Got pressed for time and had a little fat out. Biggest problem was too much beef fat which is not as palatable as pork fat, IMHO. It was from butcher and packer which I added cayenne and red pepper flakes which gave it a nice heat. Next batch will be from scratch for sure with recipes found here.
