Hello World

Here is some smoked sausage I made the other day


cut meat into feedable pcs for grinder


1st cut grind


season mixture on meat....I mix the set back in refrigerator


2nd cut grind


stuffing sausage....by roping


roping completed...30 lb...link twist not shown


drying sausage for 30 min

after 6 hrs of smoking... soaked in cold water, then air drying for blooming

Pinch here and there.....i used all my coin change.....i by pork butt from FoodTown IN houston....i had made a wooden smoke house some years But Ike took it.

Mr B nice job on the sausage. I see why you could only use 3 rods, they are some fat boys there.

Ok.... it's the MES 30 and when i complete my crate smoker I will place pics on here...
 
lol....Yes I only use the 35-38 MM Hog casing....

I have a wooden crate im turning into a smoke house... will put pic on here when completed...
