Looking good, next time you may want to wait to put the therm in around the 3 hour mark. When you insert it in raw meat any possible bacteria goes in with it. Keep the pics coming are you going to foil and what type of wood will you be using?
 
Oh boy. That looks like it's pretty thick and dense. Might be more like a midnight snack. Been there done that. If I were you I would have a plan B ready to go for supper.
 
Using hickory and apple mix. I sterilized the therm before I put it in. But thanks for the advice. I'll wait next time. Hit a plateau on the temp. Been at 150 for awhile. Is this normal?
 
Yes I will be foiling. Already got my finishing sauce ready too. Been spraying it with captains and apple juice !!!
 
The stall is where your at and unless you cook at higher temps it's very normal. Also as you get closer to your target temp it slows down as well.

Yes it was worth it!! Should have done 2 with all the time I invested!! I'm sure it will all be gone today. Hmmm what to put in the smoker next!!!???
