So I went down last thursday to the keys for the weekend. I had some work to do, mainly buffing and waxing my fathers, and my boat. Got that all done Friday and did some BBQ and smoking while there. Thursday night, my aunt cooked some Yellow edge Grouper that she caught the day before in 650 ft. of water. It was amazing!! Friday, I BBQ a steak, again, excellent. And Saturday I got up at 3:30 to start a 10.5 lb. pork shoulder. I rubbed and rested the night before. Warmed the smoker up, and had her in around 4:30 am. I decided to not foil this time to make a crispy bark. The rub was pretty much winged it. All day the neighbors looked over the fence asking if I was cooking, lol. So, I pulled it around 6pm, let it rest an hour, and man was it good. I invited all the neighbors over, as well as my aunt who brought more grouper to fry. Great food with great people. After dinner I packed some beer and rum and went fishing. Caught some Mangrove snapper, but most were small. Great weekend!!
