First Time Smoking a Prime Rib

I don't mind being corrected and I'm glad this over. It's 40 years since meat cutting s book and time takes its toll. Ak1 and are Canucks and we shouldn't argue over nomenclature.

Again, you did a nice job on it.   For future reference, what you are looking for might be called a number of things.  Rib roast, standing rib roast, bone in rib roast, whole ribeye and whole bone in ribeye, just to name a few.   A whole ribeye loin consists of 7 bones.   The "small end" sits right next to the NY Strip loin and the large end sits right after the chuck.    Depending on your butcher, if you only wanted a 3 or 4 bone loin, you might be able to specify which end of the ribeye you want.  Lots of people prefer the smaller end as they view it as being more tender.  I prefer the large end (next to the chuck) because it contains a larger amount of the rib cap (spinalis dorsi muscle) which is one of the most tender and delectable parts of a cow.

Main reason for explaining all this is so that you can keep an eye out for advertisements and perhaps grab one or more "prime ribs" when they go on sale.  Around here, the "sale price" has risen a bit but you can still get them now and then for $6-$7 per pound.   When that happens, I load up my freezer.

Pay special attention to the sale flyers during Christmas week. I save my money during the year & buy a mess of 4 to 6 pound "Choice" Prime Ribs during Christmas week.

I put them in Vac-seal bags & freeze them for my year's usage.
