I think you are under on the steel. Just my 2 cents.

My slab is 2 sheets of mesh ,bar right around the edge & doubled up in the corners .I brought bar up out of the slab then bent it around & joined it to run up through the block wall & joined it again to bar right around the perimeter.

I can I suggest that you  put bar up through the block,tie it to bar running right around the perimeter of the block & pour concrete into the block.This will help spread & support your hearth slab &  whatever goes on top of it. The blocks I have were cast with a channel in the top for exactly that purpose,you could cut out a bit 2'' x 2'' in each block so you can trowel finish the top of the concrete. 

This is my oven .I hate to think what it weighs all up.

I suppose if you aren't putting a lot insulation  over your bricks then the weight will be less. I don't want to sound like I know everything.

I don't build anything for a living.I followed the Alan Scott method from his book & plans that I bought from him. He was a pioneer in this field after adapting old designs into new commercial builds.Some of his bread ovens are 9 foot by 7 foot ,internal!

Firebrick is heavy ,my oven is about 260 fire  bricks ,thats coming off a hearth thats 1m x 1.2m. x 10cm. with 12mm rebar running both ways every 25cm. It has a brick centre pillar under it.

Can you see how quickly the weight adds up?
 
 
Okay guys got a little off track with another project. Back to the oven, just finished base walls. Looks pretty good not perfect but pretty darn good.
Is there a reason you made  the front this way?

How does it support the hearth slab?How big is the hearth slab?

Let me see if I can get a few photos of the latest big unit that went in here in the version of Little Italy I live in.

It was made by a specialist Italian mason,I may be able to save you some pain later.
 
These come in a half height block,you can rub reo bar through that channel,so if they are available near you then an extra course of block will allow you create a bond beam right around the perimeter but you may want to think about a steel lintel across the front to span that gap.Layer of block on top it & centre wall. That will support your load.
You are really neat & your block work looks spot on,great shame if you went past the point of no return & it cracks up on you.
