Started a smoke on 2 butts this morning on my 18.5 WSM. No hiccups yet. This is my first dry smoke and also my first smoke foiling the butts so we will see how it all goes. Here's a few pics.

They should not take that long I would check them after 45mins.This is my first chicken quarters smoke. I've done whole chicks but never quarters. Do they take about 1.5 to 2 hours to cook at 250-275? Just wondering if you might have some insight
