OK, the first photo here is the final product, obviously I'm doing something wrong. they turned out great tender and moist with crisp prosciutto. will def do again.


OK, I love smoked legs, but even if I throw them on a hot grill after smoking, the skin just isn't right. (Maybe I'm not grilling them long or hot enough.) So I thought, why not replace the skin with prosciutto? I wrap my ABTs in it and people rave about how great they are. So here I go. Above in package and below skinned and covered in Jeffs rub.

And into the MES @225 with cherry wood chips.
Not enough prosciutto so 3 of them are going to bed nekkid!
 
Update on the legs-my laptop was about to die so I was rushing to submit my post before I lost it. I smoked @ 225 for 3 hours, then bumped it up to 275 for another 45 min. to bring the internal temp up to 170. Checked them all with a Thermapen before pullind them out. Also put twice baked potatoes in for the last hour. It was quite tasty and a good day hanging out by the smoker! Thanks for reading, David.
