OK, I love smoked legs, but even if I throw them on a hot grill after smoking, the skin just isn't right. (Maybe I'm not grilling them long or hot enough.) So I thought, why not replace the skin with prosciutto? I wrap my ABTs in it and people rave about how great they are. So here I go. Above in package and below skinned and covered in Jeffs rub.
Here they are wrapped up and prosciutto secured with toothpick on my leg rack.
Not enough prosciutto so 3 of them are going to bed nekkid!
