Smoking this baby right now. Brined over night with water, light brown sugar and kosher salt. Used Jeff's Rub along with a little Killer Hogs BBQ Rub. I also wrapped it in some bacon. Lined water pan with foil to catch the drippings. Have MES set at 225 degrees using mostly apple, a little cherry and even less pecan wood. Smoke smells great!
Just finished eating and pork roast turned out great.
