So I'm going to make another attempt this weekend to smoke some brisket. I will follow the recommendations based on my last attempt. I will post pictures too.

Here's a question. My little brother bought the brisket. He tells me it's 2 pieces attached that all together weigh about 13 lbs. I haven't seen the brisket but he is going to send me a few pics later tonight using his mobile phone. I highly doubt I can fit this size brisket into my 30" MES. Is it okay I cut them in half or will I lose all the juices during the smoke? Any suggestions or ideas?
 
That will be fine to cut it, BTW  those guys in the FBI van are probably getting pretty hungry

Just an update, but we're going to delay smoking the brisket. Strong forecast for wind/rain. I will keep everyone posted when we do smoke that brisket.

On a positive note, I just purchased the AMNPS with Pitmaster Choice Pellets. I don't mind re-loading wood every hour but I would like to try my hand at cold smoking.
