Don't know about you guys but I have had enough of winter and ready to get back to smoking something. -1 @ my house for the 3rd morning in a row.

I smoked a pork butt for Super bowl Sunday and vacuum sealed and froze the left overs. I made pulled pork enchiladas with the leftovers yesterday.

Started with whole wheat wraps and filled with pork, red kidney beans, 4 cheese Mexican shredded cheese, rolled them up and placed in a casserole dish. I put more cheese over the top and added a can of Ortega enchilada sauce. Baked for 1/2 hour @ 400 degrees and this is what you get. I also chopped up a fresh Jalapeno pepper and sprinkled over the top.

Springfield Sportsman's Show this weekend, I can't wait for Spring!
