Hello from Central Florida

I am new to smoking. When I moved to a new house last year I got a CharGriller SuperPro 2121. I plan to add a side fire box. I don't have much experience with grilling either, my family did it a lot when I was a child but haven't myself.

My name is Melissa and I live in Windermere, Florida. I look forward to trying lots of recipes.

This weekend my fiancé and I tried it for the first time. We struggled getting the charcoal to stay lit, but after several attempts we managed to get adequate heat. We did two racks of spareribs for four and a half hours averaging 225 degrees. We were surprised at how often we had to add more charcoal to maintain heat. I'm sure we made many newbie errors. Potatoes and corn on the cob were added the last hour. The food all tasted good.

I'm looking forward to reading these forums more (you helped this weekend with the veggies!) I wish I'd found you all earlier.

Welcome to the board, Melissa!

 

You should start with the very basics like learning the behavior of charcoal (both briquettes and lump) and the behavior of your rig. You could run some test burns just to see how things will go, and maybe sizz off some simple hot dogs or burgers while you're at it.

 

Adding the firebox will let you smoke "indirect" meaning your food isn't facing glowing coals directly. With your current setup you can explore a world between grilling and smoking, where the heat is direct to the food but you can also add a smoky element that you won't get from regular grilling.

 

If you like it so far, there's a lot of fun discoveries waiting for you.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
