Dino Ribs w/Qview

Did some dino ribs. I love beef ribs. I got a "whole" rack from the butcher. It was actually 2 racks with about 4-5 bones in in them. You can see some of one of the racks before I cut it up. I like to cut them individually when I cook them. Get more rub on em and more bark (I am a bark fiend). 



All rubbed and ready for the #2. I had to have a side dish so I threw in some baby backs. 


Smoked em about 7 hours with AMNPS with Hickory, cherry and oak at 240*. I then put them in a pan and cover and back in the smoker for just about 30-45mins with the smoker off. It is still hot in there but starts to cool a bit. I find this step kinda loosens them up a pinch and helps to render just a little more fat. Not long enough to affect the bark (did I mention that I am a bark fiend). Pulled the bbs at 6 hours. 





If you haven't gotten a whole rack, give it a shot sometime. I just don't usually find a good selection in the case once they trim the hell out of em and chop em up. 
 
At first look that heavy bark I thought they would be dry. Nice job.

They look GREAT! I looked at some beef ribs today. Their was so little meat on them the dog would have run off if I had brought them home.

Yeah, I know what you mean. Thats why I had them sell me the whole rack in the cryovac. This will be my standard beef rib method from here out. I had the butcher pick the thickest rack.

Like I said above, Yours look nice & meaty!!

I had to result to cutting the Ribs off when I buy my annual supply of Prime Rib, plus I put an extra 1" from the Meat to the Ribs. Cost more that way, but I get some Awesome Dino Ribs that way.

If I could find some like you got, for a decent price, I'd be all over them.

 You mentioned you cut each rib individually to get more rub on them and adds more bark. I like that idea. Will that work on baby back and St. Louis ribs too?

You could do it, but if you do be careful, because once you cut them individually the heat will hit them from all sides & they get done a lot quicker & can get over done easily.

I wouldn't expect to do a 3-2-1 on them.
