Do the probe test before you pull it. I have had them go to 210 on occasion before they were right. 204 is my most magic number though.
What a mess this butt was bigger then my average and wad deboned talk about crumbling apart usually I can get it in one or two chunks not this one! Resting in a bowl covered in plastic wrapped in a few hoodies! I knew I was in trouble I checked a few spots with the probe and it was crumbling!

Turned out tasty there is another good sized bowl as well,may have to vac seal some!
