country link sausage ingredient

The recipe I used is out of ryteks book minus the ginger. I thought the thyme was it. When I went to add the ginger I tasted the ginger and I thought it wasnt what I was looking for so I didnt add it.....

white pepper

ginger

nutmeg

thyme
 
I used to do basic salt , pepper and sage , but also added poultry seasoning . Sounds crazy I guess , but worked for my taste .

What about grinding texture? I run my pork through a coarse plate first, then mix in the seasoning, and run it again through a finer plate. It gives the sausage a very tender texture.
 
Here is another breakfast sausage recipe that really has a great flavor.  Also has some added ingredients that make a difference.

1 pound ground pork

1 T brown sugar

3/4 tsp salt

1/2 tsp black pepper

1/4 tsp dried thyme

1/4 tsp dried rosemary

1/2 tsp dried sage

1/8 tsp marjoram

1/8 ground nutmeg

pinch of cayenne pepper

1 tsp smokehouse maple seasoning [optional]  [I use McCormicks Grill Mates smokehouse maple].  Reinhard

When you say coarse what size plate? Some here may consider 1/2" course, others 1/4".
I run my breakfast sausage through the 1/4" plate and call it good. We like that chunkier meat in the link.
 
The Key spices for breakfast sausage that I finally came up with are ginger and coriander, These are the two that make breakfast sausage "sing" it took me many years to figure out the spice's! not a big fan of sage. I use Witts #110 as a base,this is for a 5 lb batch,  2 1/2 table spoons witts 110, 1/2 tsp coriander, 1/2 tsp ginger, 1 1/2 Tbs corn syrup, start with 1/4 cup ice water. the best breakfast sausage I ever had!

The recipe sounds good schooney. The sausage I am referring to does have sage in it but it has a certain bite that might be the ginger your talking about. Unfortunately I am not a big fan of coriander    Blah...lol
