Big Joe coming!! - Page 2

Well it's finally here but I still have to wait to get it set up. All my helpers are tied up with their children this weekend, so I will have to wait to get it set up and start playing with it.

 

 

 

 

 

At least it's here and I can at least enjoy looking at it.  :drool

Yes sir looks like a whole lot of fun there. I don't think I've ever heard a bad word by an owner, except about deliveries........ <Chuckles>

 

Glad it finially got here, now just to get it smokin!

Thanks guys, timberjet, when you get to be my age you don't have much left but patience. I'll get it set up tomorrow and do a break in run, then I can finally start cooking on it.

Well my now Big Joe is finally set up and ready for use. I got my oldest son over today, of course I had to feed him and his family, so I did a chicken on my Akorn for dinner. We got all set up this afternoon and I did a burn in cycle. Here are a couple of shots.

I plan on doing my first cook tomorrow for dinner. I am most likely going to do a single rack of baby back ribs for me and the wife. That way I can use the fire box divider and play with only using half of the grill.

Here are the obligatory first cook pics from my new Big Joe! I did a single rack of baby back ribs so that I could play with the firebox divider and see how the grill reacted to just using half of it. I cooked these straight without doing the foil wrap and they were unbelievably moist. The cook was a dream, temps held rock steady and it exceeded my expectations. I couldn't be any happier. Even my wife is only half as mad as she was, about me getting the Big Joe, after eating these.

I'll tell you what, new smoker, first cook WOW  color is perfect look moist and tender, I'd say you hit it out of the park  points1.png

Thanks Gary. I was very impressed with the way these came out. Like I said the cook couldn't have been any easier. With my Akorn I would have been constantly checking the pit temp and occasionally making small adjustments. With this Joe I brought it up to temp and let it run for about 1 1/2 hrs to get heat soaked. The temps never varied during this time. I put the ribs on, the temps came right back to 225° and just set there for the whole cook. I have foiled ribs before that weren't as moist as these, they were fantastic. I am super happy with my new Big Joe.

If you can cook ribs that good lookin, it was well worth the wait.

 

Beautiful ribs, great job, and I like that new pit!

 

Really pretty ribs.

Did a reverse sear NY Strip tonight, came out great, perfect medium rare. Plated with some sauteed mushroom and grilled Parmesan Cauliflower.
