Moisture problems

My buddy has a MES Gen II, I think, it has the vent on the side. He said when he is done smoking something the inside of the smoker is almost dripping with moisture. He has to clean it soon or it will mold. 

He uses a water pan so I suggested not using it and to pull the chip loader out part way or even all the way to get more air flow. 

Are those good things to try? Any other suggestions?

I would have to say most of the MES guys around here Don't use water and have noticed no difference in quality, not to mention, enjoy a better Bark on meat. He can skip the water or remove the pan at the end of the cook, run the heat to max and Dry out the smoker for 30-60 minutes...JJ

I don't use my water pan and don't have moisture issues at all. When I am done I wipe the glass and the temps sensors down then leave the door open while it cools. By the time it is cool the inside is bone dry.

I'm not a watt burner but I would not use the water pan.

Not a MES user but like a water pan.  Does an MES have a top vent?  Condensation is simply a problem of air flow.  If it doesn't have a top vent that is adjustable, I'd fore go the water pan too.

If you have low humidity, adding a little moisture "can" be beneficial..... Here, in the desert, I will add a tuna can with 1/4" of water in it to up the humidity a bit..... BUT an MES water pan is way too much water to add... and vents are wide open... Humidity can also snuff out the AMNPS... I did a test, and the water expanding to steam, stopped/slowed the air flow to the Mail Box mod... had the AMNPS been in the smoker, it would have gone out....

Ditto on that.  I learned the hard way, no water in the pan in my MES.
