Hello everyone, i have been a lurker of this forum for awhile, I live in South Texas, the Rio Grande Valley. I enjoy smoking and grilling when ever I have the time, routinely I will cook for friends and family. Up to a few weeks ago I was mostly cooking brisket, Pork shoulder, ribs, chicken and have done a whole hog once.

Recently I have began experimenting with making sausage with very good results thanks to the information gained from this forum. Thank you all for the knowledge that you provide.
