I have found that my stuff gets done a lot quicker than the recipes calls for. For example I just did the BEER CAN CHICKEN and it called for smoking it 3-4 hours. Mine was done in 2 hrs. 20 minutes. ( 165 ). It turned out fantastic very juicy and tasty. Having the wireless thermometer saved me many times and kept me from overcooking my meat.

SI smokers are very VERY efficient. The fact that you have the SI 1, which is smaller, means your coking chamber being smaller should always cook quicker. We use a Nesco 6 qt roaster for Sunday dinners.  A chicken sitting on a bed of taters and carrots is always done in a shorter period of time in the Nesco than in a big oven.  Just no crispy skin.
