New and needing advice on a build

Hi all - I just picked up a large stainless cabinet, plan to smoke fish, turkey, turkey legs, and a number of favorites from Adam Perry Lang's BBQ book. I live in NY state - "upstate" - which means nowhere near the rotten apple. My son got me into this awesome pastime by feeding me some incredible food, what better way to get hooked ?
So this cabinet of mine has insulated doors but is not insulated on top/back/sides.
I need to find a flat adhesive-backed gasket material to seal the doors, and would like to find an insulating material that can be used inside the box - but I'd rather not have to cover the insulation with another layer of metal on the inside if there is such a material that's safe to use.
Cabinet has double doors about 20" wide and 5' tall. Cab is about 5'6" tall, 26" deep, and 40" wide.
I plan to smoke in the 130° range for fish and 220-275° range for other meats. Plan to build a firebox on the side, at least that's what I'm thinking right now.
I'll likely copy all that text about the build and put it in the correct sub-forum later today, when I'm not half asleep. Thanks in advance for the great forum.

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it.

Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

IMHO if you are wanting to have temps as low as 130 you should go with electric heat and a PID control like an Auber. It is very hard to get those low temps using charcoal or wood unless you have a detached firebox with a long pipe feeding the heat and smoke to your smoke box.

Thanks for the welcome. I did some searching earlier today and decided to get Tillman Panox 615 to insulate the outside. The search function on this forum does work very nicely, that's where I found the info on Tillman. The size of the cabinet might help me get lower temps - it's 40"W by 65"H by 24"D. The other thing going for me right now is our outdoor temps are cold... like a high of 10° tomorrow !
