Smoked Pickled Herring
1 - Mise en place
2 - Draining pickling solution
3 - Herring on rack
4 - White alder smoke being applied to herring, let set for 10 .- 15 minutes.
5 - Smoking pickling solution, pale blue smoke, 3 minutes.
6 - Refrigerate for two days during osmosis, then enjoy.
