My Super Bowl Spread! (Booo Hawks didn't win.... but the food was good!)

OK so my team didn't win, but the game was good and the food was great!

 

Did some prep on Saturday to make it easier on Sunday:

 

  • Smoked 10 lbs. wings at 250°, just smoked them naked. Then tossed half of them with Yoshida's Teriyaki sauce and the other half with Frank's Red Hot, then put them in ziplock bags in the fridge.

 

 

 

 

  • While the wings were smoking I smoked 3 racks of ribs for 5 hrs., then wrapped them in foil and put them in the fridge overnight.

 

 

Game day! Put the ribs in a 250° oven for two hours to re-heat. Then made up some stuffed bacon wrapped mushrooms. Mixed up cream cheese, blue cheese, Frank's Hot Sauce, and some BBQ rub. Then spooned it into some mushrooms and a few jalapenos I had sitting around. And wrapped it all in BACON! :sausage:

 

 

 

 

Tossed the shrooms into the smoker, and while that was going on I fired up the Weber Kettle and tossed the wings on to re-heat and char a bit. Then the teriyaki rings got hit with a sauce of melted butter, Yoshida's, chopped fresh garlic, and sweet chili sauce. The Buffalo wings got the standard butter and Franks Hot Sauce treatment. Not a great picture of the wings but there they are. :biggrin:

 

After the wings come off the grill I took the ribs out of the oven, sauced them, and tossed them on the hot grill for a little crust.

 

 

Not great shot of the shrooms, the bacon contracted quite a bit and squoze them down, but they were very tasty. Two hours in a 275° smoker.

 

 

All served with various chips, dips, some taquitos for the kids, brownies, beer, soda..... a good day! :biggrin:

  Looks like a great spread. Sorry the game didn't turn out for you, but at least the food did!

Shrooms were a hit, think my daughter about turned into a mushroom from eating so many. All things considered at least it was a good game, and that almost dropped the ball catch Seattle had at the end was amazing.

The mushrooms are really easy. This recipe makes a dozen:

 

1 dozen medium to large mushrooms

1 pack cream cheese

1-1.5 Cups of cheese (sharp chedder, blue, etc.)

2-3 Tbsp. of whatever seasonings you like (I use my BBQ rub)

1 lb. bacon regular sliced works better than thick sliced.

 

Stem mushrooms and scrape gills out. A grapefruit spoon works well for scraping gills, if not a regular spoon works as well.

Soften cream cheese and mix in cheese and seasoning(s)

Use back of a spoon to smoosh cream cheese mix into each mushroom. Don't press to hard or the shrooms will break.

Wrap each mushroom in one piece of bacon.

Smoke for 1.5-2 hrs. at 250°

Enjoy!

 

For the batch above I was inspired by Buffalo Wings. So they had blue cheese, Franks Hot Sauce, and a little bit of my BBQ rub.

Man, what a spread!!  :drool  Everything looked delicious, Johnny...nicely done!  Thumbs Up  Sorry about your Seahawks, but I gotta admit I was pulling for the Pats...it was a great game though!
