Trying a turkey for the first time. It's about 13.5lbs. I chose to marinate it over night in a wet brine of
1/2 cup kosher salt
2 tbs garlic powder
2 tbs onion powder
1 tsp black ground pepper
1/2 cup surgar
2tsp paprika
4cups water
I then vacuum sealed it and let sit for the last 24 hrs. I took it out this morning dried it off and let sit for 2.5 hrs.


Got smoker up to 300 deg Fahrenheit put some apple wood chips in, now the bird is smoking.
