Finally am going to post up. Been studying these threads for atleast 6 months and I want to genuinely thank everyone for sharing their experiences. I started out smoking on my 4 burner Kenmore gas grill which, at the time, I thought had pretty good results. Of course I got the smoking 'bug' and had to get something better. That something better was a BBQ Pro Vertical gas smoker I picked up from Sears for $100 on sale (Black Friday plus other coupon shenanigans). My first smoke was a spiral cut ham. I coated it with agave and brown sugar and it turned out great! It had such a strong smoke flavor, way stronger than the gas grill. And the bark was tremendously good, it reminded me of jerky. Needless to say my wife, who thinks smoking is a waste of propane, loved it! Gotta keep the wifey happy!
I am still learning and I usually refer to these forums just before a smoke for inspiration and cooking times. My smoker seems to run a little hot, lowest temp last night was ~245 degrees, but I have seen temps as low as 215 in the past. Not sure why that is but I did just get my tank filled up, maybe that's why?? I'll be posting some Qview later of my butt that I just smoked last night, it is resting right now.
