Kevin, welcome to SMF! Glad you are finding the information useful here. Sounds like you have a ton of experience and there are a BUNCH of folks here with electric smokers.
Interesting family history. Thanks for sharing. Maybe he called his UDS a "Chinese smoker" because the Chinese smoke their ribs hanging vertically from a rack. I am a huge fan of charcoal with wood smoking. A WSM with a BBQ Guru turns it into a set and forget smoker, but that's about double what you'd pay for an electric.
