Smoking ribs a day early

New to posting on here. Looking to smoke some Thai ribs (w/Zea's thai rib sauce) for the big game. However, due to prior obligations I will not have time to actually smoke them on Sunday. Was thinking of smoking the ribs and firming them up on the grill on Saturday. Then frigerate them overnight. On Sunday just put them on the grill to warm them up and sauce them up.

Would smoking them a day early and reheating them on the grill the next day affect the ribs in a negative way at all. Any insight would be appreciated.

No it is good to do that You can be part of your party, I wouls smoke them Sat then do the finish on Sun.

There are some other threads on here were people smoke them almost all the way then smoke then for an hour the day of to finish them. I have not tried that but other members seem to have good results. I would suggest searching through some of those threads.

Restaurants the world over smoke them, refrigerate them then finish on the grill. I'd say you're fine. Couple things to watch for though:
1. Depending on how you like your ribs, even if you take them to fall off the bone consistency in the smoker, they'll firm up A LOT in the fridge. Gelatin is a funny thing. They'll soften back up on the grill.
2. Careful with sauces and sugary rubs. Reheating on the grill will deliver a lot of heat and it would be awful to go to all that work only to scorch the crap out of them at the very last step. Don't ask me how I know.

You'll be OK, about half the BBQ places around here smoke a bunch, they reheat on the grill

Thank yall. About to put rub on them in a little while to be ready for smoking tomorrow, help put my mind at ease about it.
