Huli Huli Kiawe smoked turkey burgers!

Fired up the mini-WSM with a good load of KBB and some Kiawe. Man that wood smokes good.!

Made my Huli sauce. Stuck it in the freezer after something to cool down so I could mix a half cup into the turkey burger.

This is the base recipe a friend in Hawaii gave me. I typically don't measure much and make approx. a double batch. I reserve a cup or so for basting during the cook. This one of the only times I ever baste while smoking.


3/4 cup, shoyu (soy sauce)
3-4 fresh squeezed limes
1/2 cup, honey
1/3 cup, brown sugar
3-6 garlic cloves - minced
3 tablespoons ketchup
1 tablespoon mustard
2 tablespoons, minced fresh ginger
1 teaspoon Sambal oelek (Asian Chile paste) or 3-6 Hawaiian Chiles
Hawaiian Sea salt to taste ( I omit as I feel the Shoyu has enough salt)
Good amount of pepper

Once I mixed the Huli sauce and the turkey burger together I put the formed burgers into the freezer for about 30 minutes. They were a bit squishy.

Can't tell you the temp if the smoker but it was low and I did have the steamer insert in for a diffuser.

If my wife hadn't been home I would've added an egg and had a Huli Huli Loco Moco!!!

Forgot to mention that I did do the Huli Huli part and flippy flippy basty bastied these guys with the sauce!

Thanks Justin. I really recommend the Huli Huli sauce! It's great. Can be a bit spicy for kids but they'll survive! Or you can decrease the ginger and Sambal.

Oops almost forgot the two hunks of chicken on the left are breasts, not burgers. No Huli sauce on those!

Yeah you do! These Huli Huli patties would make a great Loco Moco. Add a piece of fried spam and an sunny side up egg, oh yeah! Kiawe Charcoal! Oh boy gonna have to keep my eyes peeled for that! Is it one of these brands:

looks great dirt sailor, i hope we are starting something new around here by adding some recipes, for these smokes. that will help a lot of the new and old people here. including myself. i think were on to something here, keep up the good work fellows,

I typically do include a recipe or a loose recipe or link back to a thread where I posted the original recipe. A bunch of my cooking though is on the fly so many spices and such are to taste and not measured. Huli Huli is one of those the recipe posted is a base to work off of. This batch had more Sambal Oelek and ginger in it, evident by the heat from both.
 
 
Thanks Case that is interesting makes me wonder if Mesquite would work. Still have to make a charcoal ring for my kettle. Having a hard time finding a small piece of expanded metal
Lowes has expanded metal.   I bough a 18'x24" piece for my mini.

Mesquite is way stringer than Kiawe. Kiawe is very mild.

At Lowes, Ace Hardware, and HD the expanded metal sheets are near the other metal stock, like flat bar, angle iron, rod, etc.. It comes wrapped in cardboard and there are usually other decorative metal, copper, or tin sheets also wrapped in card board
