I bought an 8lb pork butt that was on sale at the local grocery for $1.97 per lb. I wanted to try to rely on the MES and AMNPS for an overnight smoke, while I slept. I kept checking things into the early hours, but didn't have to touch much. I wanted to time it for lunch(ish). Cleaned and rubbed about 8-830pm. In the MES at 950pm at 230 degrees with an AMNPS full of hickory and apple. At 1230am IT is 109. Went to bed. 6am IT 154. 645am IT 154. 745am IT 161, still smoking! 810am IT 165, foiled and bumped temp of MES to 250. 11am IT 205, removed and put in cooler for 1 hour.

Here are the pics. Oh, I used Jeff's Rub and BBQ Sauce to top the sandwiches.
