Sunday Beef Ribs (short plate)

Good morning, folks...My butcher came through for me this week with some nice beef short plate ribs at a decent price. 

Guessing anywhere from 6-8 hrs on this cook. Simple kosher salt and coarse black pepper rub, over post oak and hickory @ 275 degrees. Will be updating throughout the day.

Those are some fantastic meaty beef ribs! I went shopping Friday and everywhere I looked they wanted 5.99 a lb. And they were mostly bone.:icon_sad:

Butcher ordered these for me - short plate vs. back ribs. They were 6.28/lb. which was a deal for around here actually. Checked elsewhere and found them as high as $10/lb.!!!

Gotcha, I wouldn't hesitate to pay that for ribs that nice.
