Well, I blew off all my other stuff today and decided to smoke the Steelhead and a 6 pound Butt. The steelhead smoke is over in the fish section. I put this on at noon today and it is a balmy 45 degrees outside.

Here is the UGly DrUm SmoKeR. Kicking out some TBS. I used Jeff's rub of course and Apple/Hickory.

Just a little breeze today. Tee Hee.....

Glad I didn't get one of these.

Yayyyyy! I won't have to go scrounging in the orchard after dark tonight with the flashlight. Thanks Dad. Big bags too! Time to get some color on that Pork! It has been steady at 224 for 4 hours since I put it in. I will probe here in a few. No hurry though.

Update. No i never opened the lid not ever. Except to put he probe in. It is at 167 meat temp and has been there for a good long while. Smoker is running at 224 still. nine hours and twenty minutes. Hahahaha. will be the bestest bestest ever ever I bet. Not pulling it and not screwing with it. Ok time to check the fish.

Is it done yet???? I'm getting hungry!

Well here is the conclusion of this smoke. It was a battle, well, not really but wow I got into the biggest stall I have had in years. It took 16 hours for this butt. That was with foil. I just couldn't bring myself to crank up the temperature. I know, I know. hahaha....... Sure is good though. Especially with chef jj's finishing sauce. I really want to thank him for that recipe.

 Likely story,       Just kidding !!
