Been BBQ smoking for about one year now (2-3 times per week).
I started using coals and chunks, then moved to split logs and chunks. I use a generic side-box smoker, but since I'm moving to Europe I figured I'd try and purchase a Lang 36" before I go. Mostly smoke chicken, chuck roasts, pork ribs, beef short ribs, and sometimes brisket. I started out using Mesquite and since moved on to Oak, Pecan, Apple, Cherry, and Apricot.
If anyone has any idea how or where to buy split logs over in Germany, please let me know :) (second time moving to Europe).
