So my first Boston Butt is going on the smoker tonight. She's a 10 lbr I picked up from Stop and Shop. Bone in, on sale for like $1.79 a lb. Not too shabby I think.

Here are some pics of me prepping it. Waiting for smoker to get up to temp (between 225-240). And on she goes:




 
Expect some weird and crazy posts from me overnight, just like last time. I'll most likely be losing it throughout the night, lol

I did trim some of the fat from the fat cap... left a little bit but was told the pork is fatty enough it'll be fine without it, and more flavor to the pork

Get the smoker set an go to sleep.   The mav will let you know what's going on.

Yeah but its pretty windy out tonight, so we may have some issues with waking me up. But i'm told pork butts are forgiving
 
I havn't decided if I really need one of those yet, but with the wind kicking tonight... it might not be a bad idea. I'm only at 220 right now. 2 vents wide open, 1 is 1/2... but i'm up to 219 right now so im slowly climbing to the right area.

Smokers only been going a half hour anyway, full of coals on bottom, and then made a small hole in center and added half a chimney starter of red RED hot coals.

Outta warm up soon, once that water starts boiling that is. I did use hot water but she always starts off slow since I keep water in it to maintain my temps.
 
About 3 hours in and we're at 122 on the pork... 189 on the smoker temp. That was because I went out there when she was around 216 and moved the coals around to get rid of the soot. I also added some more coals, as she's eating through fuel due to the cold temps/wind.
 
Sigh... here we go, I just went to bed and the damn thing starts beeping... creeped up to 250... went outside, closed one vent so only 2 are open, sprayed it with some apple juiced, closed it back up. Went from 200 to 210 to 220 to 237 now real quick... thattttttttt can't be good, i may have to close down another vent part way, shes up to 241 now... should start beeping soon
 
Having a helluva time keeping the temp constant. She keeps hanging around 210-215... so I put one vent wide open, another half... that should bring the temp up.

Porks at 144 currently (it's 2:30am, been on for 5 hours)

What's funny is my probe sensor wires were lower than inside the smoker and it's so cold outside the smoke/heat is condensing on the wire and finding it's way outside, where it freezes and falls to the ground. So theres a frozen puddle of liquid smoke on the ground.

I had to push the wires in more and get tem so they were lower INSIDE the smoker to prevent this...

If ya can keep your temp somewhere in the neighborhood of 220-250* , ya should be ok... Butts are forgiving, maybe the most forgiving of smokes !
 
4:15am... been smoking what... umm 7 hours now... temp hit 215 and woke me up so i went out there, took middle off, moved coals around (and added more since i was outside)... DAMN its cold out there!... porks at 151 internal temp.

Waiting for smoker to get up to 220 before i go back to bed now...

I have my alarms set for an internal temp of 195... low of 215 and high of 250

Must be going good now. It's been over 2 1/2 hours since the last post. Adam must be sleeping like a baby.

It's still damn cold outside (17 degrees) but I got 4 hours of straight sleep.. It did beep at me once in night when temp hit 250... but I just set my alarm for 260, screw it. lol

Anyway alarm went off when she dropped a bit in temp... so I went outside, spritzed the pork with apple juice and moved the coals around. I have a lot of soot down there, so i added more charcoal... I've basically used an entire bag of charcoal so far

Internal temp is 171 and heres a photo:
