Game Day Pastrami

Just rubbed up a little over 16 pounds of corned beef flats. I will be smoking these late Friday, early Saturday for the game sunday.

Care to share your rub recipe? I'm looking to make some pastrami w/a small flat (3lb) just to get started. Looking for rub suggestions.

Go to amazingribs.com and look up, close to Katz pastrami. Best recipe I have found so far.

It was so cold out last night ( mid 20's with some good wind) that I wasn't even thinking about pictures. It took about 10 hours to smoke all the pastrami. They smell and looked great. Can't wait to tear into them tomorrow.
