Hey, new guy from Florida...don't hold it against me!!!

Hello,

 

I'm Pansuco!  Long story short is that I got that name in Costa Rica...it means "fat belly"...and I embrace that!!!

 

So like I said I am in Florida.  North Florida to be exact.  I have been smoking for about five years now and I am happy to say that I have finally purchased a nice smoker!  As a teacher, I couldn't afford the Lang that I wanted, so I was lucky enough to find a guy to build one for me.  It's not the best smoker out there, but it is roughly 598 times better than the one I had before!

 

My other hobbies are wood working, working with the youth in my church and my Young Life kids, coaching soccer, and playing with my three month old daughter!

 

And I guess the most important thing I could write on here is that I am a newbie with a love to smoke!  The new smoker was made from an 80 gallon tank and it is reverse-flow...my first time with this!

 

Ok, I have babbled enough...any questions...bring em!

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to something you put on a plate to eat then someone here has probably done it then smoked it.

Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Feel free to comment on the fire box door. The guy who built it didn't really understand what I wanted...dang it! He is going to fix it, so any suggestions would appreciated. My thought would be to have him make a door that goes all the way up to the bottom of the grate in the fire box. I also want to have a better box built to hold the fuel. If nothing else, I want to drill a ton of holes in the existing pan so the fuel can breathe. Thoughts?

Nice looking smoker!! PDT_Armataz_01_37.gifHow are the temps when you are running it? How far does that fire tray sit off of the bottom of the firebox? If its a couple of inches then your multiple hole idea in it should work, but a replacement made from heavy duty mesh would be best. The firebox door should be OK the way it is only you may want to consider adding another air inlet to the fire box up higher across from the entrance to the cook chamber! They help to move heat into the CC and allow you to throttle down your inlet to the fire to conserve fuel.
