Its really hard to beat pecan, IMHO. But if you did that with pecan, you should just give away any other wood you have and stick with it. LOL

Those are some of the prettiest ribs I have seen in a long time, and musta been a Pro cooking, to be able to do that in those adverse conditions.
 
That is some fine looking food. A fool smoker is a happy smoker. At that price for butt I would have to stock up.

Thanks Foam for the kind words.  I get a lot of rib practice, both grandsons always want ribs no matter else I am smoking.

And you are right    " The  Boss is always right ".

I get tickled at all these young guys trying to act all tough and macho out in front of people, but when they get home you know its a different story.

I learned years ago,  We would go shopping my wife would say "what do you think about this one" I would say "you like it, she would say yes, then I would say well I like it, This process would repeat several times, with the salesman just giving me a puzzled look. Then Finally I would go find a place to sit down till she was finished.  I would tell the salesman If she likes it I like it, You will understand one day  "Boss is always right"

LOL----That's how I got to celebrate our 46th Wedding Anniversary last month!!!

I figured it out early on, makes life simpler.   We were doing a remodel (years ago) The painter had talked to my wife on a color for the bedroom, I cam home to check on him and said "did you run this by her" ? he said no but she will love it. I said " stop right now and let her see it before you spend a lot of time. He said oh it'll be OK she'll like it.  Next day he was repainting the room. From then on he said I'm not painting anything till you wife approves it.   And that always doesn't work either. The first house we bought was brand new wasn't quite finished and they asked her what color she wanted the outside trim, Two weeks after we moved in I was repainting the trim..

I used a little Yellow mustard on the ribs before seasoning, not in the sauce. I do want to try to make a Mustard type sauce, I have tasted a few I really liked

Try This, This is my tweaked version of a Robert Irvine Recipe
  • 3 cups ketchup
  • 1 cup brown sugar
  • 1 cup Cider Vinegar
  • 1/2 cup yellow mustard
  • 1/3 cup Worcestershire sauce
  • 2 tablespoons cayenne pepper For really Hot!!!   One Teaspoon for mild (I use the mild version)
  • 1 tablespoon sea salt
In a bowl, whisk together the ketchup, sugar, vinegar, mustard, Worcestershire sauce, cayenne and salt in a saucepan over low heat. Cook for 5 to 6 minutes to blend flavors. Remove from the heat and hold until using. Yield: 1/3 gallon.
