Lance here,

Finally bought a offset smoker/gas grill combo(longhorn combo from lowes).

I have grilled on everything you can imagine, including some makeshift engineered grills we made in afghanistan, but I have never had a decent grill to use.

Looking forward to moding this grill to get some briskets and ribs goin, and learning as much as possible from you veteran smokers.

Oh ya.

biggest question I have is about initial setup.  I have this model: http://www.charbroil.com/oklahoma-joes-longhorn-charcoal-gas-offset-smoker.html, the cook box is approximately 20inches long by 18 inches wide(damn near square).  I notice most of you guys are closing off a lot of the opening between the fire box and the cook box and using tuning/convection plates like http://www.horizonbbqsmokersstore.com/servlet/the-307/Convection-Plate--dsh--For/Detail.  I am wondering what the correct dementions for both of these would be, or if its even necessary for such a small smoker.

I already took the firebox apart and use copper rtv sealant to seal up the firebox gaps and use black rtv to seal the cookbox door to keep it from leaking.  I also used 3 inch metal dryer vent from the smoke stack and lowerd it to the grill level.
