I monitor IT to let me know when to start doing the bend test for doneness.  I don't believe in flapping the lid any more than what is needed.  IT was about 190ish when pulled.  (depending upon where you measure).  I wanted good breakdown of collagens and fat.

I did some a few month back and just turned out too greasy. Yours look awesome. I'll give mine another try using your recipe.
 
The most common mistake people make with beef ribs is overcooking.  Every time I have done beef ribs, they finished quicker than an equivalent weight of pork ribs. Pay close attention to the amount of pull back (amount of bone exposed), and the bend test.  If they are overcooked, the (water) moisture is driven out of them, and you are left with a meat with an oily texture. 
 
Where do you find such  good beef ribs?  Found some alright ones and still fatty. Them look great!

I love Beef Ribs!!  Shame they even had to trim the meat off between the bones, but I guess that's why they give that great price.

Great job Addertooth    I wish we still had a Safeway, Kroger, HEB, Albertsons and Tom Thumb  But since Tyler is home base to Brookshire's they did a super job eliminating all their competition, except for Wall World, Anyway it's hard to find beef ribs with any meat on them they cut them as close as they can then charge a high price for what you get.

Thanks BearCarver, Gary S and Graco.  The family did a great job of devouring them.  I keep promising myself, when I do a beef rib cook, they will be used to make stock.  But I keep forgetting about preserving the bones while I am eating. 
 
 
I got 4 racks at Safeway about 6 weeks ago, when they were 99 cents a pound.  As for the lack of invite, I have no discernible excuse, lets get together and cook sometime.
Safeway and 99 cents? Looked over to see if the ex was beside me. haven't seen a safeway since '85. Meaty lookin'  and nice smoke ring.
