CSRibs for the Seahawks game.

Pretty short post here. I took some country style boneless ribs out of the freezer yesterday and after thawing I put mustard and jeff's rub on them. Overnight they soaked up all that flavor.

Then into the smoker with the usual.

The Jalapeno's I soaked in Margarita mix and Tequila for a half hour, then rinsed and dried. Cream cheese, little smoky, bacon.

not much if any wind.

Some snacks for the cook. I like to chill them in the freezer right after taking them out. Down to room temp.

I took the CSR's to 170 very low and slow at 220 then into a bath of Raineer Beer and butter with some honey drizzled on top of the whole shooting match. Then I dusted the whole smackaroo in Jeff's rub again and double foiled. Did not take a pic of that part of the operation though.

they turned out amazing. so much so i did not get one picture. there were not even any dirty napkins around. I don't know if the dogs ate them or the guests.
