Well, I'm going to do my first smoke on my Christmas present turkey cannon tomorrow in the MES. This should be interesting. If anybody has ever used one and has any tips I'm all ears! I am brining the turkey as we speak in the brining bag and brine mix that came with the kit. Will post some Q-view as the smoke rolls along.

Damn and I just left Sunriver! I could've come over for dinner if I'd known! Just picked up a turkey, Safeway has them on sale for $0.69/pound!

Wow, I should have waited till this week to buy one. I paid 1.58 here in town. Yea Case next time you are in the neighborhood give me a shout!. I have to say this thing may be a little faster at cooking turkey but not by much. It sure isn't twice as fast. Not in the MES anyway.
 
Thanks guys. There would have been plenty Case! It was a 15lb bird and there were only six of us. Plenty of leftovers for everyone. The turkey turned out great and was nice and moist. As far as the turkey cannon goes I didn't see the big reduction in cooking time that I expected and was advertised. It took about 6.5 hours to cook at 275 in the MES.  The last turkey I cooked was this summer with pretty hot ambient temps so I was getting temp spikes up to 295 and it took about 7 hours for a 13lb bird. Temp yesterday was about 40 so the MES never got above 278.
 
Beautiful Color,   I am wondering how much more moisture the bird actually picks up from the canon ?  I watched the video he poured 2 cups of brine into the canon I wonder how much was left after the cook or did it boil away ?  Looks like a beer can chicken cooker at an angle to me

I put 1.5 cups of chicken broth in mine and it was all gone. There was virtually no juice in the pan at the end of the smoke and the meat was nice and moist. I think when I use it again I might try putting the cannon directly on a rack and not in a pan. I think it would speed up cooking time. On this cook the breast was done way before the thighs. The thighs should cook faster without a pan.

Yeah I'd be interested to know  I have a couple of SS  beer can chicken cookers that just sit flat on my grill or smoker

Hey Red Dog , I just saw your thread on the cannon. That turkey looks AMAZING !! My question is did you have pecan smoke on it the whole cook time or did you let smoke die down and refill with

chips after a certain time. Also what was your target IT and was that in the breast or thigh. Thanks for the info and Q-views , I am always looking for some inspiration !
 
Thanks Pop-Pop. I kept smoke on them the entire time except about 1/2 hour. I had probes in the breast and thigh and was hoping for 170 breast and 165 thigh. As it turned out the thigh was quite a ways behind the thigh so the breast finished at about 178.
