Hi,
My name is Steve and I am from Pa. I just picked up my first MES 30 and can't wait to get to smoking something. I have been reading this forum for about 2 weeks gathering all kinds of information to use with my new smoker. I have been smoking on a cheap propane smoker for about 5 years but wanted one that I would use more often. I would appropriate any advice on how to use and what to cook. I also got a amnps and a new maverick 733 probe to go with the smoker. Any advice to using these I would also like.

Hey Steve, welcome to the forum from just south of you, outside of Pittsburgh.  I got the MES 30 and the AMNPS as well.  Smoke ... everything!  I love the AMNPS in the MES.  Of course I just got my smoker in November, so I don't have much experience.  I have tried number of things so far...spare ribs, brisket, whole chicken, cheese and eggs (twice!), country style ribs, turkey legs and a Boston butt for pulled pork.  Everything has come out great so far.  My wife will go to the local grocery stores and if she sees something for sale, she'll buy it and ask me if I can smoke it.  I tell her, most definitely, and I come to the SMF to find out how.  I used the wood chips for my first smoke, the ribs and brisket.  I've used the AMNPS for everything else since I got it.  Great tool that compliments the digital temperature and timer in the MES.  Load up the AMNPS for how many hours you need, set it and forget it.  Although you can't help but fiddle with everything anyhow.

because their are so many different ways to make great Q...
