et732 dual probe, the bbq probe (sits on the grate) measures about 10-20F more than the food probe (through a potato, with 2+ inches of the end exposed)

 

so using a food probe will cause you to cook at higher temperatures because the temp reading will be a lot lower than the actual temperature (assuming the bbq probe is the correct one for the job!)

 

i also tested this with a separate bbq probe (made by maverick again) vs an oregon scientific food probe with the same results

Use the boil test to check probe accuracy. Water boils at 212 degrees. At the opposite end, ice water should read 34 degrees.

perhaps it's reading a little potato   ... reverse the probes and see
