New smoker...

Thread Starter

Hello all,

I have been lurking for a few months, and have now officially signed up.

My name is Ben, I live in central Illinois. I have a large Big Green Egg, that I have had for a few years, but until about 4 weeks ago, had used it mostly to grill hot dogs and hamburgers for my kids. Every time I did, I felt a certain amount of shame for not using it to even close to its potential.

I had never smoked anything prior to a few weeks ago. Since lurking on this site, I built up the courage to start smoking. I bought a DigiQ controller and a 10lb pork butt. Found a rub recipe on line and jumped in. Though it took considerably longer than I planned, the meat was awesome. I have done a few more pork shoulders since, and have one in as I write this now. I am certainly learning something everytime I use it, and finally don't feel the shame I did when grilling hot dogs alone. ;)

I look forward to smoking all varieties of meats as the weather gets better, but will likely stick to pork while learning the basics, as everyone has told me it is the most forgiving.

Welcome to the board! You'll have a blast branching out into chicken, salmon, etc.

Smoking meats is kind of like standing at a sound mixer's control panel with a bunch of slider controls where you can vary so many elements at once.
